Fresh Strawberry Pie

A fast, easy and fresh recipe that taste great!

16 oz Package of Fresh Strawberries
Heaping Tablespoon Corn Starch
1/3 to 3/4 Cup Sugar
(Depending how tart your strawberries are)

Start with one 16 ounce container of fresh strawberries.
Clean take the top off and cut in half.

Place in a glass sauce pan. Squeeze half a lemon or lime over top. Add a heaping tablespoon of cornstarch, third cup of white sugar and a teaspoon of vanilla extract then stir well. Cook very low stirring often until strawberries have broken down and sauce has thickened.

I'm using the little pie maker as seen on tv make small pies.

Preheat to 400 well you're putting the pastry dough into the moulds.

Take the scraps from cutting the bottom crust roll into a ball then flatten with a rolling pin between two sheets of parchment paper

Brush bottom crust with egg wash then fill with strawberry mixture. Don't overfill then put tops on and brush with egg wash.

Put in preheated oven for 20 minutes or until tops are golden brown.

And after 20 minutes they look like this. And you can see why you have to be careful not to overfill them. Let them cool before removing from the molds . Then enjoy!
