Emergency Potato Bread A Fun, Fast, Easy & Very Tasty Recipe - Dinner Straight From the Garden Series

Comes in real handy if you forgot to buy bread! You can have this bread on the table in just a few minutes and its sooo goood you might even "forget" to buy bread more often! If you add a bit of sugar & cinnimon instead of the savory ingredients the batter makes great pancakes too!


Ingredients

1 cup cold mashed potatoes (I used leftover instant potatoes)
1 cup flour
2 tsps baking powder
3/4 cup milk
2 dashes black pepper
1/2 teaspoon dry chives
1/2 teaspoon dry onions chips
1/2 dry dill weed

2 eggs
1/2 teaspoon Santa Paula spicy steak seasoning or any grill seasoning with salt
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon dry finely crushed oregano
2 tablespoons or so of vegetable oil for frying




Mix all together all the ingredients.
Put enough oil in pan to coat bottom & turn heat to medium.
Spoon batter into small pancakes then press down on the hot pan to form.
Cook until golden on first side (a couple of minutes at most) then flip & cook other side until golden (second side cooks even faster than the first).
Stack in oven on warm until all batter has been used. Serv hot or cold.
Freezes well just put wax paper inbetween then stack & freeze. To reheat just pop them in the toaster!
